YUM! Tonight I made one of my favorite high school dinners - Mable's Cool Ranch Doritos Chicken. In high school (and college too, matter of fact), my best friend Tracy and I were inseparable. We would alternate spending the night at each other's houses, (mixing in Emily, Dena and Yan Yan, as well). But, Tracy's mom Mable was the BEST cook of all our moms. And, since I was such an emaciated little thing, she delighted in the fact that I love love loved her food.
Tracy moved to the Carpet Capital when we were freshman. Wow, her family was so exotic to me. They were Catholic! Her mom made casseroles! Tracy had a tv in her room! (Can you see the sheltered life I lived?) We had so much fun staying up all night, being silly girls. I'm happy to say we're still very good friends and talk on the phone almost daily. In fact, right after I filled the house with the fragrance of her mom's recipe, I called Tracy up and said "I made the Cool Ranch Chicken" and we both had memories of our long-ago slumber parties.
I'm so blessed to have had a close friend for over 1/2 of my life. And, now that we both have our own children, we talk a lot about the fact that we both SUCH goodie two-shoes, that if one of us started to even LOOK down the wrong path, the other was right there to jerk her friend back onto the straight and narrow.
So anyway, here's the super easy recipe:
Put 1/2 stick of butter in the casserole dish to melt while you're preheating the oven to 375
4 chicken breasts
1 package of McCormick Taco Seasoning
1 big grab bag size Cool Ranch Doritos, pretty finely crushed
Dip chicken breast in the melted butter, then in the taco seasoning, then back in the butter, then in the crushed Doritos, and back in the casserole dish.
If you have left over Doritos, spread them over the top of all the chicken breasts. Cover and bake about 30 minutes, or until done.
I think two great side items are Great Northern Beans, and a green salad.

Ack! I do a chicken recipe much like that, except I cut my chicken into fingers, first. Tracy's mom sounds like she was awesome.
